Pecan Pie Bread Pudding







What You'll Need



  • One (16 oz) loaf day old French bread
  • Two and One half cup milk
  • One cup half & half
  • Four eggs, lightly beaten
  • One cup granulated sugar
  • One Tablespoon vanilla
  • 1/8 teaspoon salt
  • One half cup butter, softened
  • One and One half cup packed brown sugar
  • One cup pecan, chopped

How to Make It

  1. Preheat oven to 350 degrees F.
  2. Cube bread the place in a large bowl.
  3. In another bowl, beat eggs, milk, half & half, sugar, salt, and vanilla to eggs; whisk.
  4. Pour over bread. Allow to sit 5 to 10 minutes
  5. In another small bowl, combine with a fork, softened butter, brown sugar, and pecans.
  6. Mixture will have the consistency of wet sand.
  7. Pour half of the bread mixture into a 8x8 inch pan.
  8. Top with half the pecan mixture.
  9. Spoon remaining bread mixture over and top with remaining pecan mixture.
  10. Press down into pan slightly.
  11. Pan will be really full.
  12. Top with remaining pecan mixture.
  13. Place pan on a cookie sheet with a edge to catch mixture that may boil over.
  14. Bake at 350 degrees F 45 to 55 minutes.
  15. Center will be slightly wiggly, but will set when cool.

CINNAMON ROLL PANCAKES







What You'll Need



    Cinnamon Filling:

  • Four tablespoons unsalted butter, melted
  • One Quarter cup + Two tablespoons packed light brown sugar
  • One half tablespoon ground cinnamon
  • Cream Cheese Glaze:
  • Four tablespoons unsalted butter
  • Two-ounces cream cheese, at room temperature
  • Three Quarter cup powdered sugar
  • One half teaspoon vanilla extract
  • Pancakes: (Can also use a box)

  • One cup all-purpose flour
  • Two teaspoons baking powder
  • One half teaspoon salt
  • One cup milk
  • One large egg, lightly beaten
  • One tablespoon canola or vegetable oil

How to Make It

    To make the cinnamon filling:

  1. Combine brown sugar, melted butter, and cinnamon in a medium size bowl.
  2. Scoop into a baggie and set aside.
  3. For the glaze:

  4. In a small pan melt the butter over low heat.
  5. Whisk together the cream cheese, vanilla and powdered sugar.
  6. Take off of the heat and set aside until ready to use on pancakes.
  7. To make the pancakes:

  8. Combine flour, baking powder and salt.
  9. Whisk together the milk, egg, and oil.
  10. Heat skillet to medium low.
  11. Once preheated, spray with non-stick spray.
  12. Add about One half cup of the batter to the skillet.
  13. Wait until bubbles start to form.
  14. Snip the corner of the cinnamon filling, and create a swirl pattern in the center of the pancake as pictured above.
  15. See notes.
  16. Be careful not to get it too close to the edge.
  17. With a wide metal spatula flip the pancake over and continue cooking for an additional 1-2 minutes until golden brown.
  18. Wipe out the pan each time and repeat with the remaining batter.
  19. Warm the glaze if needed and drizzle over pancakes.

Zesty Sloppy Joe Casserole







What You'll Need



  • Eight oz. dry macaroni pasta
  • One TBS olive oil
  • One pound lean ground turkey or lean ground beef
  • One cup diced sweet onion
  • One cup diced green bell pepper
  • Two - 15 oz. cans Hunt's MANWICH Original Sloppy Joe Sauce
  • One - 10 oz. can RO*TEL Diced Tomatoes and Green Chilies
  • salt and pepper, to taste
  • One cup shredded mild cheddar cheese
  • One half cup diced sweet pickle, if desired

How to Make It

  1. Heat large pot of salted water to boiling.
  2. Cook pasta according to package directions, except one minute less than package states for al dente pasta.
  3. Drain and set aside.
  4. In large skillet, heat oil over Med-High heat.
  5. Add onion and green pepper.
  6. Saute for about 5 minutes, or until veggies begin to soften.
  7. Add in ground turkey.
  8. Cook, breaking up the meat with spoon, until turkey is no longer pink and veggies are crisp tender.
  9. Turn off heat.
  10. Drain off any liquid that might remain after cooking.
  11. To skillet with onions, ground turkey and peppers, add in one can of Hunt's Manwich and one can of Ro*tel. Combine.
  12. Preheat oven to 350 degrees F.
  13. Spray a 9" x 13" baking dish with cooking spray and add reserved cooked pasta.
  14. Pour turkey mixture over the pasta. Stir.
  15. Add enough of the second can of Hunt's Manwich to thoroughly coat the meat, veggies and pasta. (I added the entire second can).
  16. Stir to combine.
  17. Season with salt and pepper, if desired.
  18. Sprinkle top of casserole with cheddar cheese. (you can cover with foil and refrigerate to bake later at this point if you like.
  19. You may need to add a few minutes to the bake time if baked from refrigerator.)
  20. Bake, uncovered, in preheated oven for about 10 minutes, or until cheese is melted and casserole is heated through. Remove from oven and sprinkle with chopped sweet pickle, if desired.

CREAMY CHICKEN RITZ CASSEROLE







What You'll Need



  • Three cups cooked shredded chicken breast meat
  • One can (10.75 oz) cream of chicken or cream of mushroom soup
  • One cup sour cream or plain greek yogurt
  • Two sleeves of Ritz crackers, crushed
  • One stick (One half cup) butter, melted
  • Two tbs poppy seeds (optional)

How to Make It

  1. Preheat oven to 350 degrees F.
  2. Lightly spray a 2.5 – 3 quart baking dish.
  3. In a large bowl, mix the soup and the sour cream until well blended.
  4. Fold in the shredded chicken.
  5. Turn into prepared pan.
  6. Top with cracker crumbs and poppy seed (if using).
  7. Drizzle melted butter over the top of the crumbs.
  8. Bake for 25-30 minutes or until crumbs are golden brown and casserole is hot and bubbly in the center.
  9. Serve with a green vegetable (I generally serve with fresh steamed broccoli)

Strawberry Cream Pie To Die For







What You'll Need



  • One quart strawberries, sliced
  • One (13.5 ounce) package strawberry glaze
  • One (4 ounce) package cream cheese, softened
  • One half cup confectioners' sugar
  • One quarter teaspoon ground cinnamon
  • One teaspoon vanilla extract
  • One cup heavy whipping cream
  • One (9 inch) baked pie crust

How to Make It

  1. Stir strawberries with glaze in a bowl and place in refrigerator to chill.
  2. Stir cream cheese, confectioners' sugar, cinnamon, and vanilla extract together in a bowl.
  3. Beat cream in a separate bowl with an electric mixer just until it begins to thicken; add cream cheese mixture and continue beating until thick.
  4. Pour cream mixture into baked pie crust; top with strawberry mixture.
  5. Chill at least 1 hour before serving.
  6. Cook's Note:

  7. I slice the bigger berries and leave the smaller ones whole. You can find strawberry glaze in the produce department.

  • Two cups crushed pineapple, drained well
  • One can strawberry pie filling
  • One can cherry pie filling
  • 12 oz. tub cool whip
  • Three quarter cup pecans, chopped

How to Make It

  1. Fold all ingredients together.
  2. Chill and serve.

Strawberry Cinnamon Rolls







What You'll Need



  • Three quarter cup milk
  • 1/3 cup margarine or butter, softened
  • Three Quarter cups all purpose flour
  • One (.25 ounce) package of instant yeast - Two tsps
  • One quarter cup white sugar
  • One half tsp salt
  • One egg
  • One quarter cup water
  • Filling
  • One cup strawberry jam (+/-)
  • One half teaspoon cinnamon
  • Two cups sliced strawberries
  • Icing
  • One cup powdered sugar
  • One quarter tsp cinnamon
  • 1-2 tbsp milk

How to Make It

  1. Heat the milk in a small saucepan until warm.
  2. Mix in the butter until melted.
  3. Let cool to lukewarm.
  4. In a large bowl combine Two quarter cup flour, yeast, sugar, and salt.
  5. Mix well. Stir in egg and One quarter cup of water.
  6. Mix well. Now stir in the milk mixture until dough forms.
  7. Stir in another cup of flour.
  8. When dough comes together flip onto a lightly floured surface and need until smooth.
  9. Return the dough ball to the bowl, cover with a damp towel, and let rest for 10 minutes.
  10. Roll out dough into a 15x10 inch rectangle.
  11. Spread the strawberry jam all over the dough.
  12. Sprinkle with cinnamon.
  13. Then evenly cover with the chopped strawberries.
  14. Roll up the dough and pinch the seam to seal.
  15. Cut into 12 equal size rolls.
  16. Place rolls cut side up in a greased 11x13 baking dish.
  17. Cover and let rise until doubled (30 mins).
  18. While waiting preheat oven to 375 degrees F.
  19. Bake in the preheated oven for 30 minutes or until golden brown.
  20. Glaze

  21. Mix the powdered sugar and cinnamon with One tbsp of milk.
  22. Stir until glaze forms.
  23. You may need to add up to another tablespoon of milk for desired consistency.
  24. Drizzle glaze over finished rolls

Loaded Baked Potato Salad







What You'll Need



  • Eghit medium Russet Potatoes
  • One cup sour cream
  • One half cup mayonnaise
  • One package of bacon, cooked and crumbled
  • One small onion, chopped
  • Chives, to taste
  • One half cups shredded cheddar cheese
  • Salt and Pepper to taste

How to Make It

  1. Wash and cut the potatoes into bite-sized pieces.
  2. Cover with water and boil until fork tender, about 20-25 mins.
  3. Drain and cool the potatoes.
  4. Once they're cool, mix the mayo and sour cream.
  5. Add the onions, chives, and cheese.
  6. Salt and pepper to taste.
  7. Top with extra shredded cheese and bacon and serve.

CONFETTI CHICKEN PASTA RECIPE







What You'll Need



    Veggies & Pasta

  • 16 oz. of Whole Wheat Penne Pasta (always cook al dente in salt water according to pkg directions)
  • Two tbsp. olive oil, divided
  • Two Boneless Skinless Chicken Breasts, cut in 1″ cubes
  • One quarter tsp. salt
  • One quarter tsp. pepper
  • One half c. Onion, diced
  • Two cloves Garlic, minced
  • One Yellow Bell Pepper, long thin slices (or red, yellow and orange…)
  • One c. Broccoli florets
  • One c. Asparagus, chopped in 1″ pieces
  • One c. Grape tomatoes
  • Spicy Cream Sauce

  • Two tbsp. butter
  • Two tbsp. flour
  • Two c. half & half
  • One quarter tsp. of red pepper flakes
  • One c. Feta cheese ( or Parmesan)

How to Make It

    Veggies & Pasta

  1. Cook your pasta and let it drain. (tip: I always add a bit of olive oil to my pasta water during cooking so the noodles don’t stick together).
  2. Sprinkle the chicken breast with salt and pepper.
  3. Heat One tbsp.
  4. oil in a skillet over medium heat and cook chicken until done and golden on all sides.
  5. Remove and let rest in a large bowl.
  6. Add the remaining olive oil and begin sauteing the onions for Two min.
  7. Add in the garlic and bell pepper and saute another Two mins.
  8. Then toss in any other woody veggies (broccoli, asparagus) saving the tomatoes until the very end.
  9. When everything is cooked, combine the veggies with the chicken in your big bowl.
  10. Now its time for the sauce!
  11. Spicy Cream Sauce

  12. In the same pan you cooked the chicken and veggies in, melt the butter over medium heat.
  13. Toss in the flour and stir, cooking 1-2 minutes.
  14. (We are making a roux) Slowly add in the half and half while stirring to prevent any clumps from forming.
  15. Sprinkle in the red pepper flakes and allow to simmer until you see boiling action.
  16. Stir periodically.
  17. When your sauce begins to thicken and bubble, turn off the heat and add in your cheese.
  18. Stir until melty.
  19. To assemble everything I like to add the pasta first so it gets nice and coated with sauce and then pour the rest of the goodies in. This makes enough for 4 people

Velveeta Tex Mex Grilled Cheese







What You'll Need



  • One lb ground beef
  • One packet taco seasoning
  • One half c. salsa
  • 12 slices bread
  • One Tbsp Butter
  • One lb Velveeta

How to Make It

  1. Brown ground beef in medium sized skillet.
  2. Drain fat.
  3. Mix in taco seasoning and prepare according to package directions.
  4. Add salsa.
  5. Butter one side of each slice of bread.
  6. Cut Velveeta into 6 pieces.
  7. In a large skillet place two pieces of bread, buttered side down.
  8. Top each piece of bread with one slice of Velveeta.
  9. On top of Velveeta spoon 1/6 of hamburger mixture.
  10. Place another piece of bread on top of beef with the buttered side up.
  11. Cook over medium heat until bread is golden brown.
  12. Flip sandwich and repeat on other side.
  13. Repeat until all sandwiches have been made.

Baked Spaghetti







What You'll Need



  • One lb. ground beef
  • One can of your favorite spaghetti sauce
  • One can tomato sauce, 15 oz
  • One onion, diced
  • about Two cups Mozzarella
  • generous shakes of oregano, basil, salt and pepper (optional)
  • eight oz spaghetti

How to Make It

  1. Brown the meat with the onion.
  2. Drain the fat and rinse under hot water.
  3. Cook the spaghetti according to the package directions.
  4. Drain and stir it together with the meat, sauces and extra spices.
  5. Put it into a casserole dish and top with cheese.
  6. Bake at 350 degrees for about 30 minutes, or till hot and bubbly.

Breakfast Enchiladas







What You'll Need



  • One lb sausage (mild or hot)
  • Two c shredded cheddar cheese
  • Eight (eight inch) flour tortillas
  • Six eggs
  • One T all-purpose flour
  • Two c half-and-half
  • One Half tsp salt
  • Three oz. package of real bacon bits

How to Make It

  1. In a skillet over medium high heat, brown sausage and then drain fat.
  2. In a large bowl, stir together browned sausage, One c.
  3. cheese and One half of the package of bacon bits.
  4. Place 1/8 of the mixture down the center of a tortilla.
  5. Roll up and place seem side down in a sprayed 9x13 baking dish.
  6. Repeat until all tortillas are filled.
  7. In another large bowl beat eggs,
  8. flour and salt. Mix in half-and-half.
  9. Pour over the tortillas in the pan.
  10. You can cover the dish and place in the fridge or bake immediately.
  11. (refrigerated it overnight and it turned out great).
  12. When ready to bake, preheat the oven to 350 degrees.
  13. Uncover dish and sprinkle remaining 1 cup of cheese over tortillas.
  14. Sprinkle the rest of the bacon bits over cheese.
  15. Cover with foil and bake for 35 minutes.
  16. Uncover dish and bake 10 minutes longer or until set and
  17. cheese is melted.

Loaded Baked Potato Salad







What You'll Need



  • Four large russet potatoes
  • One half cup mayonnaise
  • One half cup sour cream
  • One half cup shredded extra sharp cheddar
  • Four tbsp stone ground or yellow mustard (to taste)
  • One quarter cup chopped chives, divided
  • Eight strips thick cut bacon, cooked crisp and chopped
  • Salt and fresh cracked black pepper

How to Make It

  1. In a medium bowl whisk together the mayonnaise, sour cream, and mustard until well mixed.
  2. Add Three quarter of the chopped chives along with some salt and pepper.
  3. Whisk to mix.
  4. Fold in the cheese and bacon (reserve some bacon for a garnish).
  5. Cover and chill for thirty minutes.
  6. Peel and cube the potatoes into One half″ pieces.
  7. Cook the potatoes in salted water until fork tender.
  8. Drain and cool slightly.
  9. Fold the cooked potatoes into the chilled dressing.
  10. Garnish with the remaining chives.

Melt In Your Mouth Oven BBQ Ribs







What You'll Need



  • 3/4 cup light brown sugar
  • one tablespoon garlic powder
  • One half teaspoon ground red pepper (optional)
  • two cups of your favorite barbecue sauce (mine is Sweet Baby Ray)
  • one teaspoon hickory smoke salt
  • one tablespoon paprika

How to Make It

  1. Preheat oven to 300 degrees f.
  2. Peel off tough membrane that covers the bony side of the ribs.
  3. Mix together the sugar and spices to make the rub.
  4. Apply rub to ribs on all sides.
  5. Lay ribs on two layers of foil, shiny side out and meaty side down.
  6. Lay two layers of foil on top of ribs and roll and crimp edges tightly, edges facing up to seal.
  7. Place on baking sheet and bake for 2-2 1/2 hours or until meat is starting to shrink away from the ends of the bone.
  8. Remove from oven.
  9. Heat broiler.
  10. Cut ribs into serving sized portions of Two or Three ribs.
  11. Arrange on broiler pan, bony side up.
  12. Brush on sauce.
  13. Broil for 1 or 2 minutes until sauce is cooked on and bubbly.
  14. Turn ribs over.
  15. Repeat on other side.
  16. Alternately, you can grill the ribs on your grill to cook on the sauce.

  • One pound ground beef
  • One pound sausage
  • One half teaspoon onion powder
  • One half teaspoon black pepper
  • One pound Velveeta

How to Make It

  1. 24 slider buns or soft dinner rolls, toasted or steamed
  2. Brown ground beef and sausage until cooked through. Thoroughly drain pan drippings from meat (I did this once half-way through cooking and then again when the meat was done).
  3. Combine browned meat, Velveeta, onion powder and black pepper in a saucepan or crock pot* and heat on low until cheese is melted and bubbly.
  4. Serve on slider bun

  • One can cream of mushroom soup
  • One can creamy onion soup
  • One can water
  • One pkg dry onion soup mix
  • One pkg frozen meatballs (Two pound size)

How to Make It

  1. Place meatballs in slow cooker.
  2. In medium sized bowl, whisk together soup mix, soups, and water.
  3. Pour over meatballs and stir.
  4. Cook on low heat for about 4 to 6 hours or on high for about Two to Three hours, gently stirring occasionally. Serve hot.
  5. This recipe can easily be doubled or even tripled if you need to make a lot for a party or other get together.

Crockpot Chicken and Dumplings







What You'll Need



  • crumbled bacon
  • Four boneless skinless chicken breast
  • garlic powder
  • One can chicken broth
  • One can flaky biscuits
  • One half can peas
  • One half onion
  • parsley
  • salt and pepper
  • sliced carrots
  • sliced celery
  • Two cans cream of chicken

How to Make It

  1. Place chicken breasts in bottom of crockpot
  2. Pour chicken broth and both cream of chickens over it
  3. Add in carrots, celery and onion.
  4. How much ever you prefer
  5. Add in garlic powder, salt and pepper and parsley flakes over it, how much ever you prefer
  6. Cook on high for Three hours
  7. Remove chicken and shred. Add the chicken back in with some crumbled bacon and the peas, stir together.
  8. Break up the flaky biscuits, uncooked, and put in the crockpot.
  9. I break each roll in about Three parts and just place them on top.

Easy Breakfast Casserole







What You'll Need



  • One half lb. breakfast sausage
  • One half C. milk
  • three frozen shredded hash brown patties
  • one One quarter C.
  • three green onions, chopped whites and greens
  • four eggs

How to Make It

  1. shredded Colby jack cheese
  2. Brown and crumble the sausage in a skillet.
  3. Drain off any grease and spoon the sausage into the bottom of a 9x9 baking dish.
  4. Sprinkle half of the green onions over the sausage.
  5. Whisk together the eggs and milk, pour over the sausage.
  6. Top with One C. of the cheese.
  7. Place the hash browns on a plate and pop in the microwave for 30 seconds to soften enough to cut.
  8. Cut each patty into 6 pieces. Place on top of the cheese.
  9. Bake in a 350 degree oven for 25 minutes.
  10. Remove and top with remaining cheese and green onions, return to the oven for Five minutes.

What You'll Need



  • One package Oreo cookies, 36 cookies
  • Six Tbs butter, melted
  • Two Tbs milk
  • One (16 oz) tub Cool Whip, divided
  • One large (5.9 oz) package chocolate instant pudding
  • three cups milk
  • One half cups mini chocolate chips
  • One (8 oz) package cream cheese, softened
  • One quarter cup granulated sugar

How to Make It

  1. Crush Oreo cookies. Place in a zip lock bag and use rolling pin to crush.
  2. In a mixing bowl, combine crushed oreos and melted butter.
  3. Put into a 9 x 13 baking dish. Press down the crust to cover the bottom of the dish. Place into refrigerator while preparing the other layers.
  4. In a mixing bowl, mix cream cheese until creamy. Add sugar and Two Tbs milk, mix well. Stir in One half of the cool whip.Spread on top of Oreo crust.
  5. In a mixing bowl, combine Three cups milk and instant pudding. Whisk for several minutes. Spread on top of cream cheese layer. Let set for Five minutes, until pudding is firm.
  6. Spread remaining Cool Whip on top.
  7. Sprinkle chocolate chips on top.
  8. Place in refrigerator for Four hours (or freezer for One hour) before serving.

How to Make It

  1. Combine the egg, One quarter c. cola, crackers, Two tbsp. dressing, cheese and salt.
  2. Add the beef and mix well.
  3. Shape into six patties.
  4. In a bowl, combine the remaining cola and dressing.
  5. Grill patties, uncovered, for 3 min. a side.
  6. Brush with cola mixture.
  7. Grill 8-10 min. longer or until juices run clear basting and turning as needed.
  8. Serve on buns.
