Cheesy Tater Tot Breakfast Bake







What You'll Need



  • four slices bacon, cooked and crumbled
  • one lb ground breakfast sausage, no casings
  • two and one half cups sharp cheddar cheese, shredded, divided
  • two cups whole milk
  • two extra large eggs or three large eggs
  • one half tsp freshly ground black pepper
  • one half tsp onion powder
  • pinch of table salt (one eighth tsp)
  • two lbs frozen tater tots
  • three TB freshly chopped parsley for garnish

How to Make It

  1. In a very large skillet, cook sausage on medium high heat, breaking up the meat and browning it.
  2. Once cooked through, drain and layer onto the bottom of a 9x13 inch baking pan.
  3. Evenly sprinkle two cups of the cheese over cooked sausage.
  4. In a large bowl, hand-whisk together the milk, eggs, pepper, onion powder, and salt.
  5. Once mixed, pour evenly over the cheese and sausage in baking dish.
  6. Layer top with frozen tater tots. If not baking right away, cover tightly with foil and chill in fridge until the next morning.
  7. When ready to bake, set oven to 350F with rack on lower middle position.
  8. Once oven reaches 350F, place casserole in oven for about 35 minutes.
  9. Top with additional one half cup cheese, cooked/crumbled bacon, and bake another five to ten minutes or until sides are bubbling and top is golden brown.
  10. Garnish with chopped parsley, let rest at room temp ten minutes, and serve.
