Fruit Pizza







What You'll Need



  • one and one third (190g) cups all purpose flour
  • one half tsp baking powder
  • one quarter tsp baking soda
  • one quarter tsp salt
  • three quarters cup (173g) granulated sugar
  • one half cup (4 oz) unsalted butter, softened but still cool
  • one large egg
  • one tsp vanilla extract

How to Make It

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl whisk together flour, baking powder, baking soda and salt for twenty seconds.
  3. In the bowl of an electric stand mixer fitted with the paddle attachment, cream together sugar and butter.
  4. Mix in egg and vanilla then slowly blend in dry ingredients.
  5. Butter a rimmed 12-inch pizza pan, line with a round of parchment and butter parchment (or line pan with foil and spray with cooking spray). Spray hands with non-stick cooking spray then spread cookie dough into an even layer in bottom of prepared pizza pan.
  6. Bake 12–14 minutes until edges are golden.
  7. Cool completely on a wire rack.
