Oven Baked Chicken Parmesan Sandwiches







What You'll Need



  • two large boneless, skinless chicken breasts (10-12 oz each)
  • one egg
  • one cup plain breadcrumbs
  • one third cup grated Parmesan cheese
  • one half teaspoon dried oregano
  • one quarter teaspoon dried thyme
  • one quarter teaspoon onion powder
  • one quarter teaspoon garlic powder
  • salt and pepper
  • two tablespoons extra virgin olive oil
  • four hoagie rolls
  • one cup marinara, homemade or store bought
  • eight oz mozzarella cheese, shredded
  • fresh basil

How to Make It

  1. Preheat the oven to 350ºF.
  2. Use a sharp knife to cut the chicken breasts in half lengthwise, making four thinner pieces of chicken.
  3. In a shallow bowl, lightly beat the egg with a splash of water.
  4. In another shallow bowl, combine the breadcrumbs, Parmesan, oregano, thyme, onion powder and garlic powder.
  5. Season with salt and pepper.
  6. Heat one tablespoon of the olive oil in a large skillet over medium heat.
  7. Take one piece of chicken and dip it into the egg, then into the breadcrumb mixture, coating the chicken completely on both sides.
  8. Transfer to the hot skillet, then repeat with another piece of chicken.
  9. Cook the chicken until browned, about three minutes, then flip and cook on the second side until browned.
  10. Transfer the chicken to a plate. Heat the remaining tablespoon of oil, then repeat with the remaining two pieces of chicken.
  11. Lightly spray four pieces of foil.
  12. Place one open hoagie roll on each of the pieces of foil.
  13. Spread about two tablespoons of marinara on both the top side and bottom side of the rolls.
  14. Place a piece of chicken on the bottom roll. Top with ¼ of the cheese, then a few basil leaves.
  15. Place the top of the roll on top, the loosely wrap the sandwiches in the foil, making sure they are sealed.
  16. Place the foil packets on a baking sheet and transfer to the oven.
  17. Bake for 30 minutes, then let the sandwiches sit for 5 minutes before opening and serving.
