Peanut Butter Cookie Dough Fudgsicles







What You'll Need



    Peanut butter cookie dough:

  • one tbsp peanut flour
  • one tbsp coconut flour
  • one tbsp applesauce
  • one tsp maple syrup
  • one tsp cacao nibs
  • Fudgsicle base:

  • one frozen banana
  • one quarter cup coconut milk
  • two tbsp cocoa powder
  • stevia, maple syrup, or agave to taste

How to Make It

  1. To make the cookie dough, simply mix all ingredients together.
  2. If it is too dry, add a touch of almond milk.
  3. If it is too wet/soft to come together, add a little more coconut flour until you can easily roll into balls.
  4. Break the dough up and form multiple little balls of dough. Set aside.
  5. To make the fudgsicle, blend all ingredients together until smooth. Sweeten to taste.
  6. To form the popsicles, spoon some fudgsicle base into the popsicle mold, drop in a couple cookie dough bits, spoon a little more fudgsicle in, then drop some more cookie dough, and repeat until the popsicle mold is full.
  7. Place a popsicle stick in the centre.
  8. Repeat with three more popsicle molds, or until you have used up the base.
  9. Place in freezer for a couple hours until frozen.
  10. To remove from the mold, run under warm water until you can wiggle them out.
  11. Enjoy!
