Peanut Noodles With Chicken







What You'll Need



  • one pound DeLallo linguine noodles
  • three chicken breasts, cooked and sliced or chopped, about four cups
  • five carrots, peeled and thinly shaved into ribbons
  • three seedless cucumbers, thinly shaved into ribbons
  • two bell peppers, red, yellow or orange, seeded and thinly sliced
  • six green onions, chopped thinly
  • one half bunch cilantro leaves, chopped
  • For the Peanut Dressing

  • four garlic cloves, minced or pressed
  • one-inch knob of ginger, peeled and grated
  • one half cup creamy peanut butter
  • one third to one half cup water
  • three tbsp rice vinegar
  • two tbsp sesame oil
  • two tbsp soy sauce
  • two tbsp hot chile sauce, like Sambal Olek

How to Make It

  1. Cook the DeLallo linguine noodles according to the package directions.
  2. Rinse and set aside.
  3. Add the cooled noodles and chopped vegetables to a large bowl.
  4. Add the ingredients for the dressing to a blender and blend until smooth.
  5. Add more water as needed to thin out the dressing.
  6. Pour the dressing over the noodles and vegetables and toss to coat.
  7. Garnish with more cilantro and green onions as desired.
